SK and I are having problems. Mainly it’s a problem with pancake addiction. What started out, innocently enough as an occassional sunday making of pancakes has blossomed into a fully fledged, every sunday that we are in Dublin making of pancakes ritual. We think that it is the fault of Maple Syrup. Maple Syrup (the 100% pure kind) used to be difficult to find in Irish supermarkets at times. It was always available in places like Avoca, but not necessarily in supermarkets. But now, it is always there. In the supermarkets.

The other problem we have, is that, we discovered just how good buttermilk pancakes taste. So we became buttermilk snobs and made them only when we had buttermilk. But then, we also discovered that, with a little tweaking of the recipe, non-buttermilk pancakes with baking powder added to the mixture work equally as well.

Of the two of us, SK’s addiction is worse than mine. I can stop at four, (small ones) as I place things other than maple syrup between or on top of them, which make them more filling. SK is another story. Take this mornings batch. Thirteen pancakes, I ate four. There are none left. Maple syrup only on all of them.

We are thinking of setting up Pancakes Anonymous for fellow sufferers. We think it would be an ideal way to discuss our problem. To debate the merits of maple syrup only, yoghurt, fruit and maple syurp, bacon and maple syrup, plain butter, lemon juice and sugar, American style pancakes versus French Crepes. If anyone would like to join, let us know.
